France, Italy and Spain host some of the best restaurants and chefs in the world and for years have delighted the world with very special dishes, wines and excellent produce. Thanks to tourism French, Italian or Spanish food have expanded worldwide. People that try the dishes from these countries tend to fall in love with them.

I think all the three might have their points. However, if we llok at the diversity and we include the one who uses more fish and different methods and processes for cooking, I would say Spanish. Spain is the second country that consumes more fish in the world, after Japan. And we have to remember that a lot of Clasical French rescipies come from a book in a monastery, taken by the French during the invasion at the beginning of the XIX century!
