China and Japan are not only economic but also culinary giants. Theirs is one of the most notorious food rivalries in the world. The Chinese and Japanese cuisines are among the most praised cuisines in the world. The art of cooking in China and Japan has evolved over the centuries due to political and social changes. In fact, Japanese cuisine was heavily influenced by the Chinese. It was during the Shogunate period, due to Japan's isolation, that Japanese cuisine drifted away from the Chinese one. The two East Asian counties are increasingly exporting their food products and cooking techniques all over the world. They have world class restaurants and chefs. Chinese and Japanese restaurants can be found everywhere. Of course, speaking of Chinese and Japanese food is a simplification. China and Japan have many regional cuisines and variations to some of their popular recipes. Moreover, these countries are lately also embracing a process of culinary modernization and experimenting with fusion food.

i love Japanese cuisine and I am always fascinated by the amount of dedication, passion, technique and continuous improvement. By way of comparison, in 2014 Tokyo alone has as many 3 star michelin star restaurants as Paris and the entire UK combined (14) - and i don't mean that because i value the michelin guide but because it's the sheer shock of French acknowledgment that someone is better than them at cooking!

Having said that, in my mind China the edge: a mind-boggling amount of amazing cuisines, of which Cantonese, Sichuan and Beijing are but a few exponents (though granted, the most famous ones). i've enjoyed amazing " chinese" food in HK, Singapore, Malaysia, San Francisco, New York, Sydney, Macau, London and as a student, I had the opportunity to live for a year with 4 british chinese whose families all owned restaurant owners. And if the michelin analogy is anything to go by, just count the amount of Chinese restaurants in Tokyo :)
